After months of careful planning, Ed Donzelman and his team are ready to debut Tulip Sandwich Shoppe — a daytime eatery specializing in fun, fresh sandwiches for eat-in and take-away.
The new dining experience carries a new name to reflect a different menu from Otto, but diners can expect the same warm service with many familiar faces, no matter the time of day they stop by.
“It’s been a dream for years,” says owner Edwin Donzelman, “and the staff finally kicked me in the butt.”
Following a grand opening Saturday and Sunday, Tulip Sandwich Shoppe is open 10 AM - 1 PM, Thursday through Sunday. Patio seating and liquor service will continue like normal for these expanded hours, with future opening times dependent on community feedback.
For Donzelman, it's hard to pick menu standouts.
“You know, after eight years, I’m not so into sausage anymore,” says Donzelman with a laugh. “But the chorizo sausage on a bun is really something special. Same with our take on a mortadella, made with whipped ricotta, pistachio pesto, and pickled radish.”
Sandwiches are inspired by the same global feeling as Otto’s nighttime menu, with bread sourced from local baker Mr. Focaccia. The creative hot and cold menu is largely designed by Chef Rosalba Colangelo — an OTTO server who returned proudly as a chef after studying culinary arts at NAIT.
“The day she saw the posting,” Donzelman says, “She was in that same day.”
Otto's journey has been one of growing bigger and reaching more of the community while staying small and heartfelt. Whether you’re picking up food as you commute to work, catching up with a friend before an evening of activities, or looking for somewhere to enjoy fresh food under gorgeous blooms, Tulip Sandwich Shoppe is your next all-local destination.
